A common complaint I get from anyone who starts meal prepping is that they don’t like to eat the same thing multiple times throughout the week.
I am someone who doesn’t mind eating the same dinner 4 nights in a row BUT I do totally understand wanting to feel excited about your food by switching it up throughout the week.
For most recipes, you can get more than one meal out of them. When it comes to casseroles, chilis or soups, and crockpot recipes, I suggest cooking it first and then halving it; using one half for your current week and storing the second half for a different week later in your month.

Work once, benefit multiple times!
According to the USDA, your leftovers and prepped meals are safe after 3-4 days in the refrigerator and 2-3 months in the freezer.
When using containers that are freezer safe, stick with containers that are made from microwave-safe BPA-free plastic or glass. These are the containers that you can use in the freezer and microwave (and usually, the dishwasher, too)!
